Chicken “Cordon Bleu” with Morels

Cooking Time: 40 Minutes
Prep Time: 15 Minutes
Makes: 4 Servings



½ pound fresh morels
4 skinless chicken breast, pounded 1/4 inch thick
4 slices Swiss cheese
4 slices Black Forest ham
2 chopped garlic cloves
½ cup chopped shallots
1 T-spoon chopped parsley
2 T-spoon olive oil
Salt and pepper


Season chicken on both sides.  Place 1 slice ham and 1 slice cheese on pounded chicken.  Roll chicken, cheese, ham and tie with butcher string.  Repeat above operation 3 more times. 

In pre-heated oven at 375 degrees, place 4 chicken rolls in a buttered oven-proof dish.  Bake 20 minutes.  As the chicken is cooking, place morels, shallots, garlic and oil together in a mixing bowl.  Add salt and pepper.  Mix above ingredients. 

Once the chicken rolls have baked for 20 minutes, add the morel mixture to the baking dish and continue to bake for another 20 minutes. 

Remove the chicken from the oven, and cut the butcher string.  Slice the chicken roll in bias and fan it in a plate.   Add morels and decorate with chopped parsley.
