Duck Breast with Huckleberry Sauce

Makes: 4 Servings


4 Duck breasts, skin on
4 Oz. huckleberries (fresh or frozen)
1 T. Spoon clarified butter
1 T. Spoon brown sugar
1 T. Lemon juice
1 Oz. Myers’s Rum
1 Oz. Butter
Salt and Pepper


In a large pre-heated frying pan, at medium high heat, in 1 T. Spoon of clarified butter, sear the seasoned duck breasts, skin down first, for 3 minutes on each side.  Remove the duck from the pan and keep hot.

Add butter, sugar, lemon juice and huckleberries.  Cook 2 minutes.  Add rum.   Cook another 2 minutes.

Slice duck breast in bias and fan it on hot plate.  Drizzle the huckleberries on the duck, and serve with rice pilaf or risotto.

*For this dish, any kind of game meat may be substituted for duck.
