Holiday Wild Mushroom Dressing

Cooking Time: About 20 Minutes
Prep Time: About 30 Minutes     
Makes : 4 Servings          

Note:   This dressing can be prepared ahead of time, put in a baking dish, and reheated with your holiday dish of choice.

1/4 Pound Pork Sausage

1/2 Pound Fresh sliced Chanterelle Mushrooms (or 2 oz. Dried Porcini or Morels)

½ Cup Poached, Peeled, and grossly chopped Chestnuts (optional)

2 Bay Leaves

2 Chopped Garlic Gloves                                            

½ Chopped Yellow Onion

½ Cup Diced Celery

1 Cup Croutons

1 Cup Dry White Wine

1 Teaspoon Chopped Parsley (or Herb of Choice)

1 Cup Peeled Diced Granny Smith Apples

Salt and Pepper (Remember, Pork Sausage is Already Salted)


Preheat a heavy duty casserole dish on high heat and saute sausage for 2 minutes. Stir.
(Remove excess fat)

    • Add chopped onions plus one pinch of salt and  pepper (2 minutes). Stir.
    • Add chopped celery (1 minute).  Stir.
    • Add mushrooms plus one pinch of salt and pepper, garlic, and bay leaves (5 minutes).  Stir.
    • Add wine.  Cook for 2 minutes.  Stir.
    • Add apples, parsley, croutons, chestnuts(optional).  Gently stir and cook for 2 or 3 minutes.
