JUMBO SCALLOPS
AND MATSUTAKE MUSHROOMS

Cooking Time: 10-12 Minutes
Prep Time: 10 Minutes     
Makes : 4 Servings

Ingredients

2 Oz sliced Matsutake mushrooms

8 Fresh jumbo Scallops seasoned with salt and pepper

1/2 Cup very finely sliced shallots

1 Chopped garlic clove

1/2 Cup dry Riesling

1 Oz. Butter and 1 Oz. olive oil

1/4 Pint heavy cream

Directions

        In a preheated large frying pan at medium-high heat, cook the seasoned scallops in the butter/oil mixture 2 minutes on each side.-Remove the scallops-  Add sliced shallots and cook 2 minutes.(S&P). You now want to add the Matsutake mushrooms along with the chopped garlic. (S&P). Let to cook 2 minutes before returning the scallops and their juice to the pan. Cook 1 or 2 minutes before deglazing with Riesling wine. Once the wine has reduce to ½, add cream. Season the sauce. Plate the Scallops and Matsutake. Decorate with 2 chive sprigs
