President Obama Wild Mushroom Quiche

Cooking Time: Approx. 1 hour
Prep Time: Approx. 10 minutes
Makes: 6 servings

½ lb. Combination yellow foot, hedgehogs and black trumpets
2 Clove chopped garlic
1/4 Chopped yellow onion
½ Glass dry white wine
5 or 6 Spinach leaves
½ Cup shredded Swiss cheese
Salt and pepper
2 Oz. butter
8" Frozen quiche shell
5 Whisked eggs
1/4 Cup heavy cream
½ Teaspoon chopped parsley
1/4 Teaspoon of fresh grated nutmeg


Phase 1:  In a large skillet, at high heat, saute onions in golden brown butter.  Add mushrooms, garlic, and season with salt and pepper.  They will render their water (five or six minutes).    Deglaze with the wine and add spinach leaves (2 minutes).   Check seasoning.  Leave to cool.

Phase 2: Combine eggs, cream, cooked mushrooms, parsley, nutmeg, and half of the cheese.  Season with S/P, and whisk vigorously for 30 seconds.  Place mixture in the quiche shell.  Top with remaining cheese.  Place in a 350 degree preheated oven for 50 minutes or until the custard is set and the top is nicely browned.  Serve hot with a mixed salad.
