Seared Halibut with Morel Sauce

Cooking time: 15 Min.
Prep time: 10 Min.
Makes: 4 Servings    


4 6-oz Halibut filets, 1 inch thick
½ lb. fresh morels
½ cup finely chopped shallots
½ Cup white wine
½ Cup heavy cream
2 chopped garlic cloves
2 oz. plus 2 oz. butter
8 long chive sprigs



In a large pre-heated frying pan, at medium high heat, in 2 oz.of melted butter, sear the seasoned (salt & pepper) Halibut 3 minutes on each side. Remove from the pan and keep hot.

Add 2 oz. butter to the pan and saute shallots 2 minutes.  Salt & pepper.

Add morels and garlic (salt and pepper) 5 minutes.  Deglaze with wine and let reduce for 1 minute.

Add cream, season.  2 minutes.

Dress Halibut in a hot plate and serve with morels and a green vegetable, such as string beans.
