Warm Spinach Salad with Lobster Mushrooms

Makes: 6


2 bunches of washed and dried Spinach in a large serving salad bowl
½ a pound of sliced Lobster Mushrooms
1 soup spoon of brown sugar
1 soup spoon of bacon bits
1 soup spoon Worcestershire sauce
1 soup spoon Grey Poupon mustard
1 soup spoon tarragon vinegar (Mushrooms All Year)
1 soup spoon Olive Oil
2 chopped shallots
Brandy for flambe
2 oz. Butter


In a large frying pan, at medium high heat, sautee the shallots and the Lobster mushrooms in the butter (S&P to taste). Set in the center of 6 hot plates.

In the same frying pan, at the same heat, cook the bacon, brown sugar, Worcestershire sauce, vinegar, Olive Oil and the mustard for 2 min.  

Flambe with brandy. Cover the spinach in the salad bowl with the pan and the above mixture for 30 sec. Mix the salad vigorously (S&P to taste). Serve the warm spinach in the serving plates
around the Lobster mushrooms.
